Ice cream shops in Colorado can be plentiful, but there aren’t a lot that use a scientific process to get it done. As of March of 2025, you’ll find a place in Fort Collins that uses liquid nitrogen.

You’re definitely not going to find a place like this in many places, especially since there’s only one Sub Zero in Colorado near Colorado State University. It’s a great coincidence that a science-based ice cream shop would be near the university.

Sub Zero Nitrogen Ice Cream got its start in 2004, and began franchising in 2008. By 2025, there were 35 locations in the U.S. with one in the Bahamas, as well.
It was in May of 2024, that we let you know that Sub Zero Nitrogen Ice Cream was on its way to Fort Collins, and it finally opened up the first weekend of March in 2025. What used to be a Blackjack Pizza location has turned into a place for dessert.

Located in the Campus West area of Fort Collins (west of Shields Street along West Elizabeth Street,) Sub Zero is at 1501 West Elizabeth. You’ll find parking on the south side of the building.

When you pop into Sub Zero you’re immediately taken aback by what the place is all about: There’s a very big tank of liquid nitrogen. They start with their original cream or reduced fat, vegan or sugar-free base, the flavor, and “add in” that you might choose, and then blast it all with the nitrogen.
It’s a little startling when that nitrogen starts, at least it was for me, but that’s all a part of the fun of it all. Kids are going to love watching it all take place.
And it tastes great- it is ice cream, after all. I don’t what I thought it was going to be, but they handed me a cup of ice cream.
