Our feature this week is Bernoulli Brulee  : Caramel and Vanilla Ice Cream, Cinnamon, Dulce de Leche, Twix Bits and Heath Bits.

This. Is. Amazing.

It goes down in history as one of those ice creams that changed my life. I’d go so far as to call it the best ice cream I’ve ever had. It is well named—as decadent as crème brûlée. At first it is full of rich layers of carmel, cream, and dulce de leche. The three weave a perfect trinity of taste across your mouth. Then you notice the cinnamon. The gentle cinnamon hot juxtaposed with the super cold ice cream, it’s a stroke of genius. Why isn’t cinnamon ice cream the next big thing? Perhaps it needs that carmel weaving through it, but the combination feels royal. The cinnamon really enhances the whole combination. If you’re sensitive to hot, perhaps ask for less cinnamon, but try not to skip such an unusual and gratifying experience.

You might think such rich but neutral flavors could get old, but the Twix and Heath bits keep you rolling from one bite to the next. One builds on the next. Their even spacing through the ice cream strikes just the right balance. They complement each other beautifully—the Twix with the soft chew of carmel and the delicate crumble of the cookie bits, and the Heath with the bold crunch of toffee. Each offers just enough chocolate to be the finishing touch without overwhelming the taste and turning it into just another chocolate dessert.

I can’t rave about this sensation enough. It truly is a work of genius. I wish I knew how many versions they went through to get such a perfected combination. Every layer and shade of carmel, toffee, dulce de leche, that you can imagine spin and fuse into this incredibly creamy treat. Like an interior designer masterfully crafting a canvas of rich neutrals that appeals to almost every palate, this could be the perfect universally appealing ice cream. The high quality texture and creaminess typical of Sub Zero just makes it all the more stunning. If you’re not in the right mood, it might be a little overwhelming. It’s not light. But prepare yourself and take the plunge. It is so worth it.

It actually reminds me of my wedding. The cake, the dress, layers of happiness, every shade of white, lace and muted lanterns, an opulent feel without the opulent price tag, and perfect to me. Goodness, it takes me away. Not every ice cream is memorable, but this is one I’ll never forget. Maybe in the future I’ll experiment with changing it up a bit, add nuts or something, but for now I just want that pure experience again.

Bottom line: Decadent. Cinnamon compliments layers of carmel and cream. The mix-ins enhance this immeasurably with the soft carmel chew, delicate cookie crumble, and bold toffee crunch. Extremely rich.
